The first painting I tried to recreate was the painting of Girl with a Pearl Earring. Obviously that was an oil painting, but if you are looking for acrylics I suggest you to try out Georgia O'Keeffe's Flower paintings. And if you down the road wish to create originals but need inspiration then I would suggest try out Indian folk art like Ganesha paintings or Krishna Paintings on this site. No two paintings look similar, they are very inspiring.

I think acrylic is a very versatile medium to use. David Hockney's, 'Mr. And Mrs. Clark and Percy' is very nuanced and beautiful. You could try recreating that. But recreating any artwork would not be easy, so I would recommend doing it multiple time.
